Notes: |
- The hops are a mix of English and American, so this is a bit of a trans-Atlantic pale ale in terms of ingredients and style.
- I used new, fresher ingredients from morebeer.com for this recipe... I can definitely tell a huge difference between the fresh malt and the canned malt I had been using in the past.
- This is the first batch in which I used my new 24 qt. stock pot, so I was able to do a near 5-gallon boil, which means better hop utilization and less caramelization.
- Inital tast prior to pitching yeast: a little understated on the maltiness, with a nice clean hop bitterness.
- Tast after kegging: Woo hoo! This is awesome. The best beer I've ever made. Tastes exactly like Magic Hat #9. Good, rich maltiness with a clean distinct hop bitterness that lingers just long enough. No caramelization flavors like I used to get (one defect taken care of!), but the FG is still a little high. I definitely went a little overboard with the hops, given the style I was going for, but it worked out really well! Also, fresh ingredients rock!
