(bittering, ~5.9% AA, 60 min., 47.8 IBU)
0.5 oz. Cascade whole hops
(flavor, ~5.6% AA, 15 min., 3.0 IBU)
0.5 oz. Cascade whole hops
(aroma, ~5.6% AA, 5 min., 1.9 IBU)
1/2 tsp. rehyrdated Irish Moss (15 min. at end of boil)
35 ml. White Labs Burton Ale yeast (WLP023)
- 50/50 Distilled water and New Milford tap water
Batch Size: 5.5 gal.

F.G.: 1.020
IBU: 52.7 (What was I thinking? It's good though!)
Notes:
  1. The hops are a mix of English and American, so this is a bit of a trans-Atlantic pale ale in terms of ingredients and style.
  2. I used new, fresher ingredients from morebeer.com for this recipe... I can definitely tell a huge difference between the fresh malt and the canned malt I had been using in the past.
  3. This is the first batch in which I used my new 24 qt. stock pot, so I was able to do a near 5-gallon boil, which means better hop utilization and less caramelization.
  4. Inital tast prior to pitching yeast: a little understated on the maltiness, with a nice clean hop bitterness.
  5. Tast after kegging: Woo hoo! This is awesome. The best beer I've ever made. Tastes exactly like Magic Hat #9. Good, rich maltiness with a clean distinct hop bitterness that lingers just long enough. No caramelization flavors like I used to get (one defect taken care of!), but the FG is still a little high. I definitely went a little overboard with the hops, given the style I was going for, but it worked out really well! Also, fresh ingredients rock!
